I read this article, which in turn convinced me to try my hand at this recipe and there was plenty time to doubt myself and Mark Bittman's purported, never-fail results during the 20-something hours that was required to complete the bread. As always, though, Mr. Bittman was right and I can't wait to make it for Mom and Dad when they come to Chicago for my sister's graduation.
